Fall is in the air...Recipe #A16 Corn Chowder

With the weather getting a bit cooler, I thought a nice chowder would warm up those chilly nights. Personally, I love the warmer weather, but I'll take the nice change. I love to go for rides over the weekends when the leaves begin to change. Even though I still believe in my heart that I belong on the beach, I have to admit that this area sure does put on a beautiful show in Autumn. Maybe I'll make this tonight for dinner (<: Corn Chowder

1 tablespoon soy butter
3 cups diced onions
¾ cups allergy-free saltine cracker crumbs
¼ cup flour
2 ½ cups water
2 ½ cups allergy-free chicken broth
3 cups diced potatoes
2 cups soy milk
2 cups frozen corn kernels
Garlic powder, seasoned to taste
Onion powder, seasoned to taste
Salt & Pepper, seasoned to taste

Mix water and broth with butter in a large stock pan over high heat. Add potatoes and onions, cook until done stirring often.

In a small bowl, mix together cracker crumbs, flour and seasonings. Add to potato and onion mixture. Bring to boil, stirring often.

Add soy milk and corn, lower heat to low and simmer uncovered for 15-20 minutes.

Makes 2 Quarts

Next week, sticking to the theme of corn....I'll post my recipe for Corn Fritters. They taste just like the ones you can get at The Old Mill in Gatlinburg....YUMMM!
